Ever since the first milennium BC., the Bay of Cadiz has been a trade emporium in which salt originally played a major role. Its use as a natural food preservative made its production in large quantities a necessity.

Artisan salt production makes the most of natural energy sources and Nature´s endless supply of its raw material: saltwater from the sea which reaches high levels of salinity in the marsh and the plasticity of the clay-rich soil, making it possible to create complex water channels in the saltworks. Tidal movements are then responsible for guiding seawater into the saltworks.

With over 3,000 hours of sunshine a year on the coast, there is an infinite supply of solar energy to evaporate the seawater. Strong, dry easterly winds, known as el Levante, blow frequently and help speed up the evaporation process. All of these elements combined make the Bay of Cádiz the ideal place for the production of this highly valued product: sea salt.
