The cooperative was founded in 1992, heir to a longstanding cooperative tradition that dates back to the Colonia Vitivinícola in 1884. It absorbed part of the membership and stock of the defunct Cooperativa Andaluza San Juan Bautista, founded in 1956, which took over from the Sindicato de Viticultores del Padre Salado created in 1914.

The current bodega facilities were built in the year 2000 in the marshlands next to the El Torno industrial estate. It covers six thousand square metres distributed between eleven warehouses with a grape press, tanks and an ageing warehouse where they craft produce wines from 215 hectares of Palomino and Moscatel grape vineyards located in the surrounding towns of Chiclana and Puerto Real.
