Albores is the beginning, the evolution of a personal concept of how to interpret produce-based cuisine, seasonal cuisine, traditional cuisine, international cuisine and the most authentic cuisine…. a matter of integrating and complementing both sea and land without losing the purity and identity of each.
In the kitchen, dishes are painted with brush strokes of different colours with vegetables, shellfish, fruit, sauces, creams, jams… all around a central sculpture of fish, meat or other seasonal produce crowned with faint aromatic traces of sherry and exotic spices.
The essence of Albores cuisine is present in every corner of the restaurant: in the colours of its plates and the paintings that decorate its walls, or the hanging garden that evokes the harmony existing between nature and fresh food produce; the lighting that illuminates the dishes and, at the same time, creates a relaxed and inviting atmosphere; the different spaces, heights and types of tables and chairs so that diners can choose the way they wish to enjoy lunch or dinner. Everything has been carefully studied and integrated in a setting with a single aim in mind: that everybody should feel at ease.
